The farm
95 hectares of Arabica across five paddocks in Mareeba, Far North Queensland, all grown, processed, and dried on a single property. It's the largest specialty estate in the country, sitting at 600 metres on red volcanic soil and sandy loam, at 17 degrees south. A true dry season and slow cherry ripening give it a character that's unmistakably Australian.
The name belongs to the family's patriarch. Jack Murat arrived in Australia in 1929 at sixteen, cut wood for a living, then grew tobacco. Although Jack never planted a coffee tree, his family pivoted away from tobacco in favour of coffee.
The coffee
Honey process. The cup leads with red grape. Sweet, juicy, and round, with the body you only get from drying the bean in its own sugars. Fermentation: 24 hrs in cherry, then 7 – 14 days post-pulp
Catuai. Pulped natural. Mareeba, FNQ.
Brew starting point
20g dose, 320g water at 92°C, around 3:00 total.
